Amsterdam Brewing Co. Collaboration with Local Winery: Flat Rock Cellars

The Amsterdam Brewing Company and local wine makers Flat Rock Cellars have teamed up to collaborate on a very special beer. Thought to be the first ever local brewery-winery brew in Ontario, the beer is set for release at a Canadian Beer News Dinner Series event during OCB Week 2012.
Flat Rock winemakers - Ross Wise and Greg Yemen, and Amsterdam brewer - Iain Mcoustra, collaborated on a Sour Cherry Imperial Stout that will be aged on oak chips.

“A theme for OCB Week this year is collaborations. After visiting Flat Rock Cellars in January to pick up pinot noir and chardonnay barrels for our barrel and sour program, we thought it would be appropriate to collaborate with the winemakers for an OCB week event,” says Amsterdam brewer Iain Mcoustra. As it turns out, Flat Rock’s head winemaker, Ross, was a former brewer in New Zealand and enthusiastic to brew on Amsterdam’s pilot brewing system. “Ross’ understanding of acidic flavours and his experience with oak allowed us to brew a unique imperial stout.”

The beer is brewed to 8.5% and uses roasted and chocolate malt to balance the acidity of the sour cherries.
